Paulette Café, an authentic French café-restaurant in Texas.

Nathalie and Jérôme the chef-owners: We both come from the south of France, from the Côte d’Azur. We both opened our first restaurant in January 2000, in which we paid homage to the flavors of our region by offering typically French dishes. Lovers of challenges, we then opened a second bistro restaurant which allowed us to innovate in the magic of textures and cuisines. The third restaurant allowed us to discover the world of French bakery and pastry. This was the springboard to opening a coffee shop in Conroe, Texas, which we discovered on a sightseeing trip. We fell in love with the town, its people and the establishment on the corner of Thompson and Davis Streets, now known as Paulette Café.
